Usually when we think sauce, we think pasta, but do you really want to eat pasta every night? I know, I do too. Really though, we probably shouldn’t. But one of the best time savers and easiest things to do to make weeknight dinners a breeze is to make a batch of sauce on a Sunday, and keep it in the fridge for the week. There are many things we can do with that extra sauce, and here is one tried and true (but sadly often forgotten) easy weeknight meal: English Muffin Pizzas! My grandma used to make this for me all the time and for some reason the recipe fell off my radar for a few years until I finally came to my senses and remembered it a couple of weeks ago. The recipe is so simple that you don’t need much: just some English muffins, some leftover sauce, and a cheese of your choice. The good news: even if you feel you absolutely stink at cooking, you really can’t screw this up.
Directions: Re-heat about two cups of your sauce on the stove top or in the microwave. Next, spoon some onto your English muffin halves, and sprinkle the cheese of your choice on top: shredded mozzarella, or maybe a nice parmesan, then bake it in the toaster oven for about five minutes and voila! A simple, quick weeknight dinner.
*Tip: Make friends with your freezer; it’s not just for chilling alcohol and making ice cubes. You can freeze your leftover sauce for up to six months, and you can keep a bag or two of English muffins in there as well.
