I like appetizers that are deceiving. And by that I mean, I like them to look great, taste incredible, but be really easy to make. These may sound like hard-to-meet standards, but this Pistachio Crusted Bread with Goat Cheese and Pear makes them totally attainable. Sometimes people see an appetizer and automatically think, “I can’t do that,” or “that looks nice but will take way too much time.” But I promise this one is so easy, and requires NO cooking (other than a toaster, if you even count that.) The only other piece you will need is a food processor or Magic Bullet. So before you pooh-pooh this appetizer, let’s go through the check list:
Can you slice bread?
Can you toast bread?
Can you chop a pear?
If you answered “yes” to the above questions, we are in business. Read on for the recipe!
1 loaf french baguette bread, sliced
1 small log of goat cheese
1 pear, chopped into small rectangular pieces
for the pistachio pesto:
1 cup extra virgin olive oil
1/2 cup pistachios, shells removed
1/2 cup fresh basil leaves, torn
salt & pepper
Place pesto ingredients in a food processor or Magic Bullet (my favorite kitchen tool), and blend. Once you have a smooth liquid, baste it onto both sides of each piece of bread. (If you don’t have a baster, spoon it onto the bread and spread it around with the back of the spoon.)
Next, spread some goat cheese on the bread, about one tsp per each piece. Top the goat cheese with a slice of pear. Place them back into the toaster for 3-5 minutes, until pears brown a bit and the goat cheese melts. Serve while hot!
