Amazing Acai Pops

 

My new favorite summer pops!!! Fresh, home made, and preservative free make these an awesome natural treat for this season. Acai berry takes these powerhouse pops up a notch. Do I get bonus points for creativity, since I’m using my crate & barrel shot glass set for something actually healthy? I think so. And who needs fancy popsicle makers?? Not you. All you need are a few glass jars and a package of craft store lollipop sticks and you’re in business. These, plus 3 simple ingredients later, and you’ve got yourself a deliciously guilt-free snack for those scorching summer days.

Ingredients:

2 packages of frozen acai puree (available at your local grocery store in the frozen section)
3 1/2 cups vanilla greek yogurt (I use Chobani, my fave)
Honey-based simple syrup (1/4 cup hot water mixed into 1/4 cup honey, stir till blended)

Directions:

Step 1: Take the acai out of the freezer and allow it to thaw for 5-10 minutes. Place in blender with 1 cup of the vanilla yogurt, and blend till mixed thoroughly.

Step 2: Add remaining yogurt to the bottom of your pop cups until 1/2 full. Top them off with the acai/yogurt blend.

Do I get bonus points for simultaneously pouring and snapping?

Step 3: Freeze for at least 24 hours, then enjoy!
